The Popsicle That Needs Four Ingredients and No Stove

Greek yogurt, vanilla, maple syrup, and mango chunks. That’s the entire ingredient list, and none of it touches a stove.

Mix the yogurt base until smooth, fold the mango through gently so the chunks stay whole, and spoon it into popsicle moulds. Six hours in the freezer and they’re ready to pop out.

Drizzle with melted chocolate right before serving and you’ve got a cold, fruity treat with almost no active effort behind it.

When Popsicles Won't Release or the Texture Turns Icy

Popsicles that won’t come out of the mould – Run the outside of the mould under warm (not hot) water for 10-15 seconds before pulling. Yanking them out cold usually snaps the stick before the ice releases.

Texture that’s icy rather than creamy – This happens when the yogurt base is too thin or has too much liquid. Use thick Greek yogurt rather than a runny one, and don’t overdo the maple syrup, since extra liquid sugar makes for a harder, icier freeze.

Mango chunks that sink to the bottom of the mould – Let the yogurt mixture thicken slightly in the fridge for 10 minutes before folding in the mango, then spoon (don’t pour) into the moulds so the fruit stays distributed rather than settling.

Cold, Fruity, and Ready to Grab From the Freezer

Popped out of the mould, each popsicle is pale and creamy with visible chunks of mango running through it, and the melted chocolate drizzle hardens almost instantly against the cold surface.

The first bite is cold and tangy from the yogurt, then the mango comes through in bursts as you hit the chunks, with the chocolate drizzle adding a bit of richness on top.

Keep a batch in the freezer and there’s always something ready when the craving for something cold and fruity shows up.

Method

  1. In a bowl, mix together the Greek yogurt, vanilla essence, and maple syrup until smooth.

  2. Gently fold in the mango chunks so you get a burst of fruit in every bite.

  3. Spoon the mixture into popsicle moulds (or a freezer-safe dish if you prefer a scoopable frozen yogurt).

  4. Freeze until completely solid, about 6 hours.

  5. Pop them out and drizzle with melted chocolate just before serving.
