The Quinoa Bowl That Finally Has Crunch

Quinoa bowls usually have one problem: everything in them is soft. Boiled grain, soft vegetables, a creamy dressing — comforting, but nothing to bite into. This one solves that with the air fryer.

Boiled chickpeas and edamame, tossed in spices and a light spray of oil, come out of the air fryer properly crisp — not just warmed through, but genuinely crunchy in a way boiled legumes never manage on their own. That crunch is the whole point of this recipe.

The assembly is different too. Instead of tossing everything into one bowl, this one is built in layers: a mint-cucumber yogurt base on the bottom, the quinoa and vegetables in the middle, and the crisp chickpeas and edamame piled on top with pomegranate for the finish. Cut into it and you get all three textures in one spoonful.

It also happens to be the rare salad that meal-preps well. Keep the layers separate — yogurt base, quinoa mixture, and crispy topping each in their own container — and assemble just before eating. The crunch stays exactly as good on day three as it was on day one.

Why the Crispy Topping Doesn't Crisp

Wet chickpeas going into the basket — Boiled chickpeas and edamame hold onto surface moisture, and moisture in the air fryer means steam, not crisping. Pat them dry with a clean towel before tossing them in the spices and oil.

Quinoa mixed in while still hot — Warm quinoa wilts the raw vegetables and thins the yogurt base underneath it. Let it cool slightly after boiling before folding in the onion, capsicum, and carrots.

Assembling hours ahead of time — The crisp topping softens once it sits on the yogurt and quinoa for too long. Keep the three components — yogurt base, quinoa mixture, crispy chickpeas and edamame — stored separately and layer them together right before serving. That’s also exactly why this one meal-preps so well.

A Bowl With Actual Texture

When it’s layered up — the cool mint-cucumber yogurt on the bottom, the quinoa and vegetables in the middle, and that pile of golden, crisp chickpeas and edamame on top with a scatter of pomegranate — it looks like far more than a grain bowl.

Every spoonful pulls from all three layers at once: creamy, fresh, and crunchy in the same bite. It’s the kind of bowl that stays interesting through the whole portion, not just the first few spoonfuls.

Make a batch on a Sunday and you’ve got proper lunches lined up for the week — store the layers apart and it holds its texture the whole way through.

Method

  1. Toss the boiled chickpeas and edamame with salt, red chilli powder, cumin powder, chaat masala, turmeric, and a light spray of oil.

  2. Air fry at 205°C for 20 minutes, shaking the basket halfway through, until crisp and roasted.

  3. Boil the quinoa according to packet instructions, drain any excess water, and let it cool slightly.

  4. Fold the chopped onion, capsicum, and carrots into the cooled quinoa.

  5. Mix the Greek yogurt, grated cucumber, mint, olive oil, salt, black pepper, and roasted cumin powder into a creamy dressing.

  6. Spread the yogurt in a serving bowl, spoon the quinoa mixture on top, add the crisp chickpeas and edamame, and finish with pomegranate seeds and coriander.
