Where the Mango Salsa Salad Goes Wrong
An underripe mango — A hard, underripe mango turns the whole salsa sour instead of sweet. A ripe mango should give slightly when you press near the stem end — if it is rock hard, let it sit at room temperature for another day or two before using it.
Over-mixing once the avocado goes in — Stirring vigorously breaks the avocado down into paste and muddies the whole bowl. Once the avocado is in, fold everything together gently rather than stirring.
Guessing on the chilli heat — Jalapeño and green chilli heat varies wildly from one batch to the next. Start with half the amount listed, taste, and add more only if it needs it.
