This cheesecake is four things in sequence: a crumbly nut and oat base, a creamy cottage cheese filling, a silky mango jelly, and a fresh mango topping. Each layer is different. Each layer requires a little patience. Together they are something genuinely beautiful.

No baking. No cream. No refined sugar.

The base is almonds, rolled oats, and dates blended with ghee, pressed into the bottom of glasses or a mold. It has that slightly grainy, sweet crunch that cheesecake bases should have. The filling is cottage cheese blended smooth with Greek yogurt, honey, and vanilla, with a little mango blended in for sweetness and colour. It is lighter than a cream cheese filling but it has the same tang. The mango jelly on top is blended mango cooked briefly with agar agar, and it sets beautifully clear and glossy, with the colour of summer.

When No-Bake Cheesecake Doesn't Set

Layers that mix together: Each layer must set properly before the next is added. The base needs 10 minutes in the fridge, the cheesecake layer needs 15. If you pour warm jelly over an unset cheesecake layer, they mix together and you lose the distinct four-layer look. Let the jelly cool to just above setting temperature before pouring, warm enough to pour easily, cool enough not to melt the layer below it.

Mango jelly that won’t set: Agar agar needs to reach a full boil and simmer for 5 minutes to activate properly. If the mixture is only warmed through rather than boiled, the agar won’t dissolve completely and the jelly will stay liquid even after chilling. Also check the agar measurement, since too little gives a soft, wobbly jelly that doesn’t hold its shape when cut.

Cottage cheese layer that tastes grainy: Blend the cottage cheese for a full 2 minutes until completely smooth, since it needs longer than you expect to eliminate all the curds. A high-speed blender works better than a regular one for this. If lumps remain after blending, press through a fine sieve. The final texture should be completely smooth with no visible curds before adding any other ingredients.

Method

  1. Blend base ingredients: almonds, oats, dates, and ghee until a coarse, sticky mixture forms.

  2. Press firmly into the base of individual glasses or a lined mold. Refrigerate for 10 minutes.

  3. Blend all cheesecake layer ingredients until smooth. Pour over the base. Chill for 15 minutes.

  4. For the mango jelly: combine blended mango, water, and agar agar in a small pan. Bring to a boil, stirring constantly. Simmer 5 minutes. Strain if needed.

  5. Let the jelly cool slightly (not set), then gently pour over the cheesecake layer.

  6. Refrigerate for 45 minutes until fully set.

  7. Top with fresh mango slices before serving.
