When the Fudge Base Won't Hold Together

Pour it in a thinner, even layer, and let the bars sit at room temperature for a minute or two before cutting so the chocolate isn’t rock-hard straight from the fridge.
Bars that fall apart when sliced – Cut with a sharp knife once the chocolate has fully set, not while it’s still soft. If the base still feels tacky after 45 minutes, your fridge may be running warm; give it another 15 minutes before slicing.

Method

Add the roasted chana, almonds, pitted dates, cocoa powder, and chocolate protein powder to a high-speed blender. Blend until well combined.

If the mixture feels dry, add the milk, 1 tbsp at a time, to help it bind into a thick, dense dough.

Transfer the dough to a parchment-lined container or box. Press it down firmly into an even, smooth layer.

Pour the melted sugar-free chocolate evenly over the top and garnish with the chopped almonds.

Chill in the fridge for 30-45 minutes, until the chocolate shell sets.
