Traditional Amritsari fruit ice cream leans on cream and condensed milk to get its rich texture. This version borrows the almond and saffron flavour profile but builds it a different way, without either.

Greek yoghurt takes over as the base, blended smooth with mango, soaked almonds, a few strands of saffron soaked in warm milk, and a hit of cardamom. Fresh fruit, grapes, more mango, banana, strawberries, pomegranate, gets folded in at the end so every scoop has something to bite into.

Pour it into a container, freeze for a few hours, and you have an Amritsari-inspired fruit ice cream that skips the cream entirely without skipping the flavour.

When the Texture Turns Icy Instead of Scoopable

Base that freezes hard and icy rather than creamy – This usually comes down to the almonds not being blended fully smooth. Blend the yoghurt, mango, almonds, saffron milk, and cardamom until genuinely smooth, no visible almond flecks, before folding in the fruit. A fully smooth base holds a creamier texture once frozen.

Fruit that sinks to the bottom of the container – Chop the fresh fruit into small, even pieces before folding in, and stir gently but thoroughly so it’s distributed through the mixture rather than concentrated at the bottom.
