Three Trips to the Air Fryer, One Proper Salad

This salad runs on a simple rhythm: the air fryer does three short jobs back to back, and the rest of the salad comes together in the time it takes for the last batch to finish. Mushrooms first, then paneer and corn together with a hit of the tangy spice blend, while you chop lettuce, cucumber, and capsicum on the side.

Paneer in a salad has a reputation problem — thrown in cold and straight from the fridge, it is bland and forgettable. Air frying it with spices and chaat masala fixes that: the edges go golden, and the sour-salt lift from the chaat masala is a world away from plain, cold paneer.

The dressing is what stops this reading as a diet plate. Greek yoghurt loosened with Dijon mustard and lemon juice, finished with fresh coriander, is creamy without being heavy — closer to a proper restaurant dressing than anything you would call “light.”

Once the last batch comes out of the air fryer, everything goes into one big bowl — the crunchy raw vegetables, the warm air-fried components, and the dressing poured over the top. Toss once, and serve it while the paneer is still warm.

Where This Salad Goes Wrong

Overcrowding the air-fryer basket — Paneer and corn need space around them to crisp; piled on top of each other, they steam instead. Cook the mushrooms as their own batch, then the paneer and corn together in a single, uncrowded layer — cook in two batches if your basket is small rather than forcing everything in at once.

Dressing the leaves too early — Lettuce wilts fast once dressing touches it. Keep the dressing separate until the very last step, and only pour it over the salad right before serving — not while the air-fried components are still cooling on the counter.

Skipping the spice blend — Without it, the corn and paneer taste flat no matter how well they’ve crisped up. The sour-salt hit from the tangy spice blend is what makes the air-fried components taste finished rather than plain.

A Salad That Actually Fills You Up

When it comes together — golden paneer and corn still warm from the air fryer, mushrooms with a bit of char on the edges, crisp lettuce and cucumber underneath, and that creamy yoghurt-Dijon dressing pulling everything together — it looks like far more effort than fifteen minutes of prep.

The textures do the real work: crunchy raw vegetables, warm crisp paneer, and a cool, tangy dressing in every bite. Nothing here tastes like a compromise.

Make it once and it becomes the salad you reach for when a plain green salad feels like too little. It holds up as lunch on its own.

Method

  1. Air fry the sliced mushrooms with salt and black pepper at 180°C for 8 minutes.

  2. Toss the sweet corn and paneer with salt, red chilli powder, and the spice blend. Spray lightly with oil and air fry at 180°C for 8 minutes.

  3. Whisk together the Greek yoghurt, Dijon mustard, lemon juice, olive oil, chopped coriander, salt, and black pepper until smooth.

  4. In a large bowl, combine the lettuce, cucumber, red capsicum, and the three air-fried components.

  5. Pour the dressing over the salad, toss well, and serve immediately.
