Where the Crispy Paneer Caesar Goes Wrong

A slurry too thin to coat properly. The oat slurry should be thick enough to coat the back of a spoon. If it runs off the paneer block, thicken it with a touch more oats rather than adding more spice. A watery slurry means the cornflakes will not stick.

Flipping the paneer too early. The cornflake crust needs a minute or two of undisturbed contact with the pan to set and turn golden. Flip too soon and it tears away, leaving bare patches. Wait until it releases easily before turning.

Method
