Air-Fried Chocolate Seed & Nut Bites
Oats, chopped almonds, cashews, and four kinds of seeds go into the air fryer just long enough to toast. Bound with maple syrup while still warm, pressed into a silicone ice cube tray, and finished with a spoonful of melted sugar-free dark chocolate on top, these set in the fridge into small, crunchy bites you can portion straight from the tray.

The Snack Tray That Toasts Itself in the Air Fryer
Eight ingredients from the pantry, one basket in the air fryer, and a silicone ice cube tray do most of the work here. Oats, chopped almonds, cashews, and a mix of pumpkin, sunflower, flax, and both white and black sesame seeds go into the air fryer together for a few minutes, just long enough to toast and turn fragrant.
Straight out of the basket, that toasted mix gets folded through maple syrup while still warm, which is what makes it hold together. Press it into a silicone ice cube tray, spoon melted sugar-free dark chocolate over the top of each cube, and let the fridge do the rest.
Thirty minutes later, you have small, crunchy bites that pop cleanly out of the tray, ready to grab and go.
When the Bites Won't Hold Together or Won't Come Out Clean
Mixture that crumbles instead of pressing into the tray – This happens when the toasted oats and seeds have cooled before the maple syrup goes in. Mix them together straight from the air fryer basket while they’re still warm, and press firmly into the tray cavities with the back of a spoon so there are no air pockets.
Seeds that scorch instead of toasting – 3-4 minutes at 350°F (175°C) is enough for most air fryer baskets, but sesame seeds in particular can go from toasted to bitter quickly because they’re so small. Check at the 3-minute mark, and pull the basket the moment everything smells nutty and looks lightly golden, not dark brown.
Bites that stick to the tray – A silicone tray is what makes these pop out cleanly. If you’re using a rigid plastic or metal tray, line the cavities with a small piece of parchment or give them a longer chill, at least 40 minutes, before trying to unmould them.
Small, Crunchy, and Ready Straight From the Fridge
Once chilled, each bite pops out of the tray as a compact little cube, a hardened chocolate top over a dense, crunchy base of toasted oats, nuts, and seeds. The maple syrup gives it a light sweetness that lets the toasted, nutty flavour of the seeds come through.
They’re firm enough to eat straight from the fridge and hold their shape at room temperature for a short while, which makes them easy to portion into a container and grab on the way out the door.
Method

Toss the oats, chopped almonds, cashews, and all seeds together in a bowl.

Air fry in a parchment-lined basket at 350°F (175°C) for 3-4 minutes, until toasted.

Transfer back to the bowl while still warm and mix immediately with the maple syrup.

Press the sticky mixture firmly into a silicone ice cube tray.

Spoon melted sugar-free dark chocolate over each cube.

Chill in the fridge for 30 minutes until set, then pop the bites out of the tray. Store refrigerated.
